La Cave aux Fioles, located in Espira in the Agly valley about 20 minutes from Perpignan, is a wine estate committed to biodynamics since 2019. On 5 hectares of old vines, Carlos and his team cultivate local grape varieties using practices that respect living things, without chemicals or inputs. Manual work, the use of plant infusions, and attention to natural and lunar cycles structure the estate's approach. Vinifications are carried out without filtration or artifice, to preserve the purest expression of the grape and terroir. The estate thus produces sincere and lively natural wines, reflecting the identity of the Agly valley and a committed artisanal viticulture.
